OMUSUBI carefully selects high quality herb chicken from Tottori Prefecture, Japan, as fillings. These chickens are raised drinking water from the foot of Daisen (Great Mountain), which is on the list of “remarkable water sources” in Japan. The name does not mean that the chicken meat has a herbal flavor; rather, it means that the chickens are fed mainly with ginger, cinnamon, garlic, and oregano. As a result, herb chicken contains less fat and tastes less gamey than regular chicken; it also has a fresher taste. The chicken thighs inside the Omusubi are cooked in a traditional Japanese style teriyaki sauce, which keeps the meat tender and juicy and coats it in a savoury aroma. We also use Kin no Ibuki senmai (brown rice) in this Omusubi, known for its chewy texture from individual grains. Each mouthful releases a unique sweet fragrance and leaves a lingering aftertaste.
