This Omusubi makes use of the traditional fermented “Kanzuri” chili paste commonly found in homemade family meals in the Niigata Prefecture. The sauce is made with locally grown red chili peppers, rice koji, yuzu and salt, taking three years for proper fermentation with multiple steps. It is loaded with the special richness and depth of fermented seasonings, and when combined with a mild chili flavor, makes the soft and juicy pork belly even tastier and a great accompaniment to rice.
