Oyakodon is a simple rice bowl made with chicken and eggs. Oyako means “parent and child” and the rice bowl is named so because the chicken represents the father and mother, and the eggs represent children. We have transformed this Japanese home-style dish into an Omusubi made with tender diced chicken thighs and shredded onions and eggs. It is seasoned with dashi (Japanese bonito stock) and melty rich egg yolk sauce, so that it achieves a balanced taste between saltiness and sweetness, which is the original Japanese flavour.
